Pea shoots are a popular crop as they can be eaten fresh or cooked. Great with kids as they tend to be slightly sweet. Their tender leaves make a wonderful addition to salads and they are a great addition to soups and stir fries, maintaining much of their firm texture once cooked or sautéed. Very high in vitamin A, C, and folic acid (B9).
